When you need a lighter side for a hearty meal but don’t have many veggies on hand, try this easy-to-make pickled carrot salad.
Carrot Ribbons
Making carrot ribbons is easy! Simply use your peeler as if your peeling the carrot. Smooth, flat ribbons will begin to peel off. Try rotating the carrot if the peels start to get too wide! we're making ribbons not sheets 🤪
Fresh vs Dried Herbs
Fresh herbs will always provide a certain depth of flavor dried herbs have a hard time hitting. It's perfectly okay for the substitution here... we're making a salad with one vegetable after all, let's keep it simple across the board with dried herbs!
1 tablespoon fresh herbs = 1 tsp dried herbs
Resting Time
After Mixing the dressing with carrot ribbons. Allow them to rest in the fridge while you prepare the rest of your meal, or at least 15 minutes! This allows your dried herbs to rehydrate and the liquids to soak slightly into the carrot.
