This Phyllo Dough Cinnamon Roll is so easy I don't understand why it isn't more common place to see this version at the brunch table versus the traditional pillowy one! Have you ever hosted a brunch?! Eggs cook so incredibly fast, how is there even time for all the steps of a traditional cinnamon roll ?? Perhaps you've discovered this recipe because your looking for an easier cinnamon roll... or perhaps you've stumbled here wondering , "What to do with phyllo dough?" Either way, this recipe covers both of those. I am sort of a cinnamon super fan over here and I can confidently say I like this crunchy Phyllo Dough Cinnamon Roll better anyway !

Phyllo dough, brown sugar, cinnamon and butter. That's it. All you'll need to make this crunchy flaky breakfast dessert. I told you it was simple didn't I?!

Starting with 4 sheets of phyllo dough, butter each sheet and stack them on top of each other. combine your brown sugar and cinnamon in a small bowl. Add half of this mixture to the top of your 4th sheet of phyllo dough.

Add 4 more layers of phyllo dough, buttering inbetween each sheet. and top off with the rest of the brownsugar cinnamon mixture. Roll the whole thing up, and slice it into 2 " sections.

Bake at 350°F for 20 minutes in a muffin pan. Remove from the pan immediately and let fully cool before icing.
