Amber's Mexican Pork Recipe

This recipe was born when my family's love for Mexican cuisine outweighed the cost of dining out. My Mexican Pork recipe dish is incredibly low cost to make and is packed with whole food ingredients giving your family a nutrient dense meal at home while still satisfying that craving for Mexican food.
The Spices
There's several essential spices you should have on hand if you want to create Mexican flavored meals at home. Pre-made store bought packets and spice blends often have preservatives and anti-caking agents (the science-y stuff). If your trying to limit these and take your meals back to basics with natural, whole food ingredients then stock up on these spices.
chili powder
cumin
sea salt
black pepper
paprika
garlic powder
onion powder
crushed red pepper flakes
oregano
Adding Depth to the Sauce
The sauce in this dish is everyone's favorite part! It perfectly soaks into side dishes like Cilantro Lime Rice and is thick enough to be mopped off the plate with tortillas. Add a deeper flavor by lightly frying your onion, dried peppers, garlic and tomatoes. I didn't have garlic or fresh tomatoes on hand so I substituted for 1 can diced tomatoes and extra garlic powder.
I recognize not all stores will carry dried hot peppers, I only first discovered them myself when I moved from New England to the South! You can easily purchase them on Amazon if you find that to be your case.. and yes, they always come that many peppers in a bag!
One Pan Dinner Meal
Once the sauce has been blended, this Mexican Pork recipe becomes as easy as a stir fry.
I used pork but this dish compliments many different proteins like chicken or beef. Go Vegetarian by adding more veggies like carrots, eggplant and legumes. This can cook entirely in one pan for easy clean up on Mexican Night at Home. Try adding additional toppings once complete like avocado, sour cream or even these pickled jalapenos.
